Mackerel Tuscan Salad

  • 1 Sole Mare Mackerel Tuscan Herb & Olive 120g can
  • Handful Spinach Leaves
  • 1 egg, boiled
  • ½ cucumber, sliced
  • 1 tomato, sliced
  • ¼ red onion, sliced
  • Lemon wedge
  • Extra Virgin Olive Oil
  • Salt and pepper, to taste

Boil egg and leave to cool. Peel egg and cut into pieces. In a bowl combine spinach, cucumber, tomato, onion and mackerel. Place ingredients in bowl and dress with lemon, olive oil and salt & pepper.
